Although I am always up for a sweet treat I have never exactly been best friends with any kind of cake. There is only a couple of variations I actually eat (for example New York Cheescake) and I was more than surprised when I tried a piece of carrot cake with a frosting recently and really liked the taste! A few days later I found a recipe in a food magazine and couldn’t resist trying it out myself and, what can I say, it tastes beyond amazing!
You will need:
– 100g brown sugar
– 1 egg
– 75g butter
– 140g flour
– 1tbsp vanilla sugar
– 1tbsp baking powder
– 1/2tbsp cinnamon
– 130g carrots, shredded
– 30g finely chopped almonds (plus some for decor)
…and for the frosting:
– 60g butter
– 150g powdered sugar
– 110g cream cheese 
Pre-heat the oven (190Β°C) and coat the bottom of a springform pan (18cm) with baking paper. Next, beat the sugar with the egg until it is fluffy, then add butter, flour, vanilla sugar, baking powder and cinnamon and stir all ingredients until you have a smooth dough. Gently fold the carrots and the almonds in and put the dough into the springform pan. Bake the cake for approximately 40 minutes and be sure to completely let it cool down before you cut it in two halves. For the frosting you need to beat the butter, add the powdered sugar and the cream cheese until a smooth mass exists. Coat the lower half of the cake with the frosting and cover it with the upper half. Spread the rest of the frosting across it and decorate it as you like. Be sure to store it in the fridge until the carrot cake is being served – enjoy! πŸ™‚
