As much as I love all kinds of fruit and vegetables, sometimes my inner sweet tooth gets the best of me (mostly right after lunch) and I start craving some candy. Although I hate giving in to these cravings most of the times I actually do – and I make myself believe that that is okay, as long as it is all limited and not too unhealthy. Recently though, I finally found my perfect healthy go to snack which is also super easy to make: Amaranth Bars. The ingredients are quite similar to those I used in my homemade granola recipe and can be adapted to your taste easily.

You’ll need:
– 3 tbsp honey
– 1 tbsp coconut oil
– 1 handful sunflower seeds
– 1 handful rolled oats
– 100g Amaranth

Heat up both the honey and the coconut oil in a pot and boil for about 5 minutes. Next, add all other ingredients and mix everything well. Now, for the next step I used an oven dish lined with baking paper on which I spaced out the mix evenly. Cover it all with another sheet of baking paper and be sure to add a weight on top (I used a book) to make sure it retains in shape while hardening. After one hour in the fridge it is ready to be cut in stripes. And that was it, basically! I really love the taste and I think it is such a perfect alternative to those unhealthy processed sweets! Oh, and I would recommend storing the Amaranth bars in the fridge as they remain more chewy 🙂
