health // let’s juice!

There is nothing like kick-starting the day with a freshly made juice that does not only contain lots of vegetables and fruit full of healthy vitamins, but that does also taste beyond refreshing! From the moment this juicer moved into our home it has constantly been in use and already served a whole variety of delicious juices – the best of which I would like to share with you today! By the way, if you are willing to buy a juicer yourself, but worry about the cleaning time: I can assure you that it does only take a few minutes to have this machine fully cleaned, I usually just rinse all the remains off the machine’s components and let it air-dry on a towel… Besides, even if it took me an hour to get it all cleaned up, it would still so be worth it!!

1. Carrot-Apple-Orange-Ginger Juice (my favorite!!)
 
2 carrots
1 apple
1 orange
1cm ginger slice
1-2 drops olive oil

1/4 Beetrot
2 Oranges
1cm Ginger slice

recipe // kitkat cake

This cake has been following me around on instagram and various blogs for a whole while now – and my little sister’s birthday last week was the perfect occasion to finally give it  a try. And I have to admit that I am over the moon with the result! Of course it does not only look quite special, but tastes like heaven, too…
What you’ll need:
2 eggs
100g brown sugar
100g flour
30g cocoa powder
2tbsp baking powder
50g grated chocolate
…and for the filling:
250g mascarpone
50g powdered sugar
15g cocoa powder
1 package of m&m’s or whatever decor you like
app. 35 KitKat sticks for the border
Mix eggs and sugar until smooth. Add flour, sugar, cocoa powder and baking powder while stirring with a hand mixer on the lowest level. Then fold in the grated chocolate pieces and fill the dough into a spring form (18cm). Bake for 30 minutes (175°C).
Once the cake is totally cooled down you can carefully divide into two. For the filling scramble mascarpone, powdered sugar and cocoa powder and spread half of the cream onto the lower flan case. Top it with the other half and spread the rest on top and on the sides of the cake. Now, stick the KitKats around it, if you like you can fix it with a ribbon. Decorate as you like – enjoy!

recipe // carrot cake

Although I am always up for a sweet treat I have never exactly been best friends with any kind of cake. There is only a couple of variations I actually eat (for example New York Cheescake) and I was more than surprised when I tried a piece of carrot cake with a frosting recently and really liked the taste! A few days later I found a recipe in a food magazine and couldn’t resist trying it out myself and, what can I say, it tastes beyond amazing!
You will need:
– 100g brown sugar
– 1 egg
– 75g butter
– 140g flour
– 1tbsp vanilla sugar
– 1tbsp baking powder
– 1/2tbsp cinnamon
– 130g carrots, shredded
– 30g finely chopped almonds (plus some for decor)
…and for the frosting:
– 60g butter
– 150g powdered sugar
– 110g cream cheese 
Pre-heat the oven (190°C) and coat the bottom of a springform pan (18cm) with baking paper. Next, beat the sugar with the egg until it is fluffy, then add butter, flour, vanilla sugar, baking powder and cinnamon and stir all ingredients until you have a smooth dough. Gently fold the carrots and the almonds in and put the dough into the springform pan. Bake the cake for approximately 40 minutes and be sure to completely let it cool down before you cut it in two halves. For the frosting you need to beat the butter, add the powdered sugar and the cream cheese until a smooth mass exists. Coat the lower half of the cake with the frosting and cover it with the upper half. Spread the rest of the frosting across it and decorate it as you like. Be sure to store it in the fridge until the carrot cake is being served – enjoy! 🙂

summer // fruit infused water

What a weekend! We were lucky enough to be able to enjoy summer at its best up here in Hamburg and the forecast for the upcoming week is not disappointing either! With temperatures this high it is even more important to take good care of your water balance and thus to keep in mind drinking enough and regularly. But since plain water tends to get boring after a while I have the perfect alternative for you today: Spice up your daily water intake with delicious berries, citrus fruit, ice or even cucumber for a refreshing summer drink. My personal favorite is frozen raspberries combined with lemon and ice cubes, but there is basically no limit to creativity here. If you are struggling with forgetting to drink during the day I also recommend taking a bottle with fruit infused water with you to work, university, sports, etc. – it helped me a lot as I simply kept forgetting about drinking water while working… Plus, it is super healthy and contains some extra vitamins that give you power throughout the day 🙂

recipe // smoothie time! ♥

Happy Easter (Monday) – I hope you all had a great and relaxing long weekend (mine was mostly filled with eating)! Ever since I got this blender for my birthday in March I have tried thousands of different  smoothie recipes, but there is one I always get back to: Raspberry-banana! Not only is it easy to make, but it does also taste amazing – especially after an exhausting workout 🙂
Just throw a handful of raspberries (I usually use frozen ones, but am fervently looking forward to using fresh ones in summer!) into the blender, add half a banana and one tablespoon honey (alternatively a splash of agave syrup) and fill up with almond milk (I recently tried it with oat milk which was quite delicious as well). Blend until smooth and enjoy! 🙂
