Happy Easter (Monday) – I hope you all had a great and relaxing long weekend (mine was mostly filled with eating)! Ever since I got this blender for my birthday in March I have tried thousands of different  smoothie recipes, but there is one I always get back to: Raspberry-banana! Not only is it easy to make, but it does also taste amazing – especially after an exhausting workout 🙂
Just throw a handful of raspberries (I usually use frozen ones, but am fervently looking forward to using fresh ones in summer!) into the blender, add half a banana and one tablespoon honey (alternatively a splash of agave syrup) and fill up with almond milk (I recently tried it with oat milk which was quite delicious as well). Blend until smooth and enjoy! 🙂

recipe // greek yogurt pancakes

A perfect sunday morning calls for a biiig plate of pancakes and lots and lots of fruit, don’t you think? Well, for all of you agreeing with me on that point I have a very special recipe today: a pancakes dough made with greek yogurt! It is easily made and tastes simply delicious due to the fluffiness that is created by adding the yogurt. 
What you will need:
  • 1 egg
  • 100g greek yogurt
  • 250ml milk
  • 1 tbsp melted butter
  • 2 tbsp sugar
  • 1/2 tbsp salt
  • 200g flour

Simply beat the egg, then add milk, butter and yogurt. Whisk together and – in another bowl – combine sugar salt and flour. Next, add the yogurt mixture to the flour bowl, whisk everything until you have a smooth dough. Now cook each side in butter for about 2 minutes – enjoy! 🙂

recipe // cinnamon rolls

I am one hundred percent a sweet person, meaning that when it comes to anything from chocolate to ice-cream I’m in! Just recently when I had some friends over for my birthday brunch, I thought about baking a cake or cupcakes – but those are standard and I wanted something special: cinnamon rolls! You know, these sweet little rolls from Sweden you can buy at IKEA? Yes, that’s them! Well, what can I say, they tasted just great! Plus, I prepared the dough the night before Sunday and I simply had to put them into the oven the next morning so that they were still warm and fresh – D E L I C I O U S, I’m telling you!
For 30 pieces you will need (for the dough):
  • 100g butter/margarine
  • 500ml milk
  • 50g yeast
  • 150g sugar
  • 1tsp salt
  • 1tsp cardamom
  • 900g flour
And for the filling:
  • 100g butter/margarine
  • 200g sugar
  • 2tbsp cinnamon
  • 1 egg
  • sugar crystals

Melt the butter, add milk and let the yeast dissolve in it. Add sugar, salt, cardamom and flour and knead until you have a smooth dough. Cover it with a towel and wait for 30-40 minutes. Then knead the dough again, divide it into three parts and roll each part into a thin rectangle. Next, coat it with butter and sprinkle it with sugar and cinnamon (mixed). Once finished, you can roll it up and cut it into pieces (approximately 4cm thick). Put the pieces onto a baking plate and wait for another 30 minutes. Then, brush the rolls with whisked egg and sprinkle them with the sugar crystals. Lastly, bake them (pre-heated oven at about 250°C) for 8-10 minutes. ENJOY!
