recipe // spinach ricotta lasagna

In my opinion there are only a few things that beat a good lasagna. I also believe that it does not always have to be the classic version. In fact, there are veggie variations that I love even more than the good old meat lasagna. One of those would be this super delicious ricotta spinach lasagna I made a few days ago. It is actually pretty easy to make in no time which is why I am positive that it will appear on my plate a lot more often in the near future…

You’ll need:

  • 1 can of sliced tomatoes
  • 150g spinach (I used frozen spinach)
  • 1 onion
  • 1 garlic clove (pressed)
  • 250g Ricotta cheese
  • a few slices of any cheese you prefer for the top layer (I used gouda)
  • Lasagna sheets
  • 100ml vegetable broth
  • salt, pepper

recipe // amaranth bars

As much as I love all kinds of fruit and vegetables, sometimes my inner sweet tooth gets the best of me (mostly right after lunch) and I start craving some candy. Although I hate giving in to these cravings most of the times I actually do – and I make myself believe that that is okay, as long as it is all limited and not too unhealthy. Recently though, I finally found my perfect healthy go to snack which is also super easy to make: Amaranth Bars. The ingredients are quite similar to those I used in my homemade granola recipe and can be adapted to your taste easily.

You’ll need:
– 3 tbsp honey
– 1 tbsp coconut oil
– 1 handful sunflower seeds
– 1 handful rolled oats
– 100g Amaranth

When it comes to public holidays May is by far the best month of the year. And when the 1st May falls on a friday it is even better!

I started the looong weekend with a workout at the gym, followed by the most delicious summer roll session at a friend’s house. Although the weather was/is still not that satisfying we spent the late afternoon exploring our neighborhood a bit more which ended up in eating ice-cream at our favorite ice-cream place before shooting my outfit. There are just so many beautiful spots around: I especially love those light houses with the painted doors, one of which you can see on the pictures – isn’t it just gorgeous?

shopping // spring favorites

One, two three – And I am spring ready! Unfortunately though, spring has said goodbye to us a few days back and it has not really stopped pouring yet… Meanwhile, three pieces that had all been on my wish list for ages have moved in with me and I still cannot believe I finally own every single one of these beauties! You may have seen pictures of my beloved Rebecca Minkoff Mini Mac in the last outfit post and I can assure you it has been in constant use ever since it arrived at my place! It just has the perfect size, the perfect color and it goes so well with pretty much every outfit and style – I’m in love!

Those of you following me on instagram (@livelifestyled) may have discovered the picture of my brand new leo loafers already. I have literally craved such pair of shoes for more than two years now, but never found the perfect ones up until recently: Unsuspectingly I was checking out the new Office London store and there they were! My dream leo loafers 🙂 I seriously cannot wait for the temperatures to go up again so that I can finally were these beauties outside (right now I constantly wear them at home).

My third spring favorite is a piece I actually discovered in winter. I just could not persuade myself to buy a leather jacket while there were minus degrees outside. So I put in on my list and as soon as we saw the first sun rays it resurfaced in my memory. To make a long story short: My size was sold out everywhere and I got very depressed, giving up every little hope I had on ever finding my perfect leather jacket again. But, I am the luckiest girl on the planet, because I discovered it on Kleiderkreisel a few weeks ago (almost new, with a discount) and have basically lived in it the past few days!
